Puran polii (sweet stuff roti)
Basically this is one of the most famous maharastreyn sweet recipes. Puran polii made with tuver dal, chana dal, or mug dal and mix dal. Traditionally serve with lots of ghee with potatoes subzi and sweet kadhi and rice. This is tempting menu isn't it??? My grandmother made it with jaggery +sugar. I dedicated this recipe to my nani. So let's make it puran polii.
Ingredients for puran polii :
Stuffing:-
boiled tuver dal. 2cups
Jaggery. 1 and 1/2 cup
Sugar. 1 cup
Cardamom powder. 1 tsp
Ghee
Jaggery. 1 and 1/2 cup
Sugar. 1 cup
Cardamom powder. 1 tsp
Ghee
Ingredients for roti :
Wheat flour. 2 cups
Ghee 1 tbsp
Water. as per required
Ghee 1 tbsp
Water. as per required
Method for puran polii :
1) boiled dal or you can take split mug dal+tuver dal + chana dal mix it and boild it in pressure cooker. Make sure your dal is not too much runny. Cool down it.
2) take heavy bottom pen or kadaii and add 1 tbsp ghee and add builded dal cook for 2 minutes and add Jaggery, sugar and mix it and cook it in a medium heat. It's easy to stick to the bottom so care full.
3)sugar and Jaggery realised there water. Stir it continuously.
4) After few minutes check sweetness of dal. add sugar or Jaggery and balance sweetness. if you wish you make it only with Jaggery or sugar. Jaggery given a nice colour and teast.
5)as you can see in the pen puran takes lots of time and patience.stir it.
6) how to check your puran is ready or not.
Firstly it was not runny and thin.
Secondly when you stir it it becomes heavy.
You stuffing will hold the shape of ball.
7) cool down completely and add cardamom powder. Made balls of stuffing.
8) make puran polii make soft dough.
Mix all Ingredients and make soft dough. Rest it for half an hour. And make even ball for puran polii.

9) hit up your tava for made puran polii.help of rolling pin and board make thick roti and place stuffing ball in to the senter and cover ball with roti see in picture.
10)you can make it Shallow fry like aalu paratha or made it like me.
